    This dish has been a staple at our Thanksgiving table for years. I prep the dish ahead and then bake off at the end of cooking of the turkey.

Ingredients:

  1. 1 pounds - to 2 pounds butternut squash
  2. 3 - large eggs
  3. 1/2 cups - sour cream
  4. 1/4 cups - sugar
  5. 1/4 cups - butter softened
  6. 1/4 cups - flour
  7. 1 tablespoons - fresh sage minced
  8. 1 1/2 teaspoons - baking powder
  9. 1/2 teaspoons - salt
  10. 1/4 teaspoons - nutmeg

Directions:

Preheat oven to 350° F.

Remove stem from squash. Cut squash in 4 pieces, discarding seeds. Cook in boiling water 10-15 minutes or until tender .... allow to cool. Remove from peel, discard.

Process squash and eggs in food processor until smooth. Add sour cream and remaining ingredients; process 20 seconds or so. Pour mixture into a lightly greased 8-inch square baking dish.

Bake at 350° for 60 minutes or until set. Can rest a few minutes, if needed.
