This dish has been a staple at our Thanksgiving table for years. I prep the dish ahead and then bake off at the end of cooking of the turkey.

Ingredients:
- 1 pounds - to 2 pounds butternut squash
- 3 - large eggs
- 1/2 cups - sour cream
- 1/4 cups - sugar
- 1/4 cups - butter softened
- 1/4 cups - flour
- 1 tablespoons - fresh sage minced
- 1 1/2 teaspoons - baking powder
- 1/2 teaspoons - salt
- 1/4 teaspoons - nutmeg
Directions:
Preheat oven to 350° F.
Remove stem from squash. Cut squash in 4 pieces, discarding seeds. Cook in boiling water 10-15 minutes or until tender .... allow to cool. Remove from peel, discard.
Process squash and eggs in food processor until smooth. Add sour cream and remaining ingredients; process 20 seconds or so. Pour mixture into a lightly greased 8-inch square baking dish.
Bake at 350° for 60 minutes or until set. Can rest a few minutes, if needed.
