Ingredients:
- 2 cups - sugar
- 3 tablespoons - flour
- 1 sticks - margarine melted
- 1 tablespoons - lemon extract
- 3 - eggs
- 1/2 cups - buttermilk
- 1 tablespoons - corn meal
- 1 - to 2 lemons (just the juice and rind from the lemons)
Directions:
Mix sugar, flour, melted margarine and lemon extract together until smooth.
Add eggs in one at a time and beat well. Add buttermilk and mix until creamy.
Pour into pie pan and bake for 10 to 15 minutes at 450 degrees F; reduce heat to 300 degrees F, and finish baking about 45 minutes more.
To use this recipe for Lemon Chess, add the corn meal along with juice and rind from lemons into the pie mixture before baking.
