Buttermilk Cornbread

Ingredients:

  1. 1/2 cups - Unsalted butter
  2. 2/3 cups - White sugar
  3. 2 - Eggs
  4. 1 cups - Buttermilk
  5. 1/2 teaspoons - Baking soda
  6. 1 cups - Cornmeal
  7. 1 cups - All-purpose flour
  8. 1/2 teaspoons - Salt
  9. 1/2 cups - Unsalted butter
  10. 2/3 cups - White sugar
  11. 2 - Eggs
  12. 1 cups - Buttermilk
  13. 1/2 teaspoons - Baking soda
  14. 1 cups - Cornmeal
  15. 1 cups - All-purpose flour
  16. 1/2 teaspoons - Salt

Directions:

Preheat oven to 375 degrees F. Grease an 8 inch square pan.

Melt butter in large skillet. Remove from heat and stir in sugar. Quickly add eggs and beat until well blended. Combine buttermilk with baking soda and stir into mixture in pan. Stir in cornmeal, flour, and salt until well blended and few lumps remain. Pour batter into the prepared pan.

Bake in the preheated oven for 30 minutes, or until a toothpick inserted in the center comes out clean.
