Ingredients:
- 1 tablespoons - olive oil
- 4 - cooked sweet Italian chicken sausage links (3 oz. each) sliced or cut up
- 1 - medium onion cut into thin wedges
- 2 tablespoons - fresh oregano leaves
- 2 cloves - garlic, minced
- 1 cups - reduced-sodium chicken broth
- 12 cups - fresh Swiss chard stemmed and torn
- 1 cans - 15 ounces butter beans rinsed and drained
- 2 tablespoons - balsamic vinegar
- - Shaved Parmesan cheese
Directions:
In a very large skillet heat oil over medium heat. Add sausage and onion wedges; cook and stir 6 to 8 minutes or until browned.
Add oregano and garlic to skillet. Cook for 1 minute. Add broth. Bring to boiling; reduce heat. Boil gently, uncovered, 3 to 4 minutes or until reduced by about half.
Gradually add greens, tossing until wilted before adding more. Add butter beans and vinegar; heat through.
Sprinkle with cheese.
