Build Your Own Cobb Salad Bar

Ingredients:

  1. 1 heads - iceberg lettuce
  2. 1 bunches - watercress
  3. 1 heads - romaine lettuce
  4. 4 - tomatoes chopped
  5. 1/2 pounds - bacon cooked, chopped
  6. 5 - hard cooked eggs chopped or sliced
  7. 1 pounds - ham julienned
  8. 4 ribs - celery chopped
  9. 1 1/2 pounds - steamed shrimp (optional) dressed in 1/4 cup olive oil and juice of 1 lemon
  10. 3 cups - sliced, grilled chicken breast
  11. 1 1/2 cups - black olives drained, sliced
  12. 2 - red and yellow bell peppers seeded, sliced
  13. 2 cups - shredded cheddar cheese
  14. 2 - avocado peeled, pitted, chopped
  15. 2 cups - blue cheese crumbled
  16. 1 bunches - red radishes sliced
  17. 2 cups - croutons (optional)
  18. - sea salt and ground black pepper
  19. - Blue Cheese or Creamy Parmesan Dressing recipe below
  20. 2 tablespoons - fresh squeezed lemon juice
  21. 2 tablespoons - white balsamic vinegar
  22. 2 cloves - garlic chopped
  23. 1 - shallot chopped
  24. 1 - egg
  25. 3 dashes - Tabasco or other hot sauce to taste
  26. 1 cups - olive oil
  27. 1 cups - grated Parmesan cheese
  28. - sea salt and freshly ground black pepper
  29. 1/2 cups - blue cheese crumbled
  30. 1/4 cups - hot water
  31. 1/2 cups - sour cream or Greek yogurt
  32. 1/2 cups - good quality mayonnaise
  33. - freshly squeezed juice from 1/2 lemon
  34. 1 tablespoons - Worcestershire sauce
  35. 2 cloves - garlic mashed in 1 teaspoon salt
  36. - freshly ground black pepper

Directions:

For salad:
Chop the iceberg, watercress and romaine lettuces. Place in a large salad bowl. Surround with individual bowls of the condiments. Place dressings in small pitchers; allow guests to place lettuce on plates and top with their choice of condiments and dressing.

Alternatively, arrange greens in a large shallow salad bowl, season with salt and pepper, then arrange condiments in rows on top of the greens.

Creamy Parmesan Dressing:
Put the lemon juice, vinegar, garlic, shallot, egg, and Tabasco in a food processor (or blender); with machine running, slowly pour in the oil in a steady stream until mixture thickens. Add the Parmesan cheese. Season to taste with salt and pepper. Dressing will keep in airtight container in fridge for 2-3 days. (Makes 2 cups)

Blue Cheese Dressing:
Place crumbled blue cheese in a bowl. Pour hot water over the cheese and mash with a fork. Add remaining dressing ingredients and mix well. Season to taste with pepper. Dressing will keep in an airtight container in the fridge for 2-3 days. (Makes 2 cups)
