Buffalo Chicken Pizza

Ingredients:

  1. 4 - skinless, boneless chicken breasts, cooked and cubed/shredded
  2. 4 tablespoons - butter or margarine
  3. 1 bottles - Frank's Red Hot Sauce small bottle
  4. 1/2 - red onion diced finely
  5. 1 - tomato sliced
  6. 2 cups - mozzarella cheese shredded
  7. 1 - Boboli (or similar) crust
  8. 1 cans - black olives small can
  9. - Blue cheese crumbles, if desired

Directions:

Melt the butter in a microwave safe bowl.  Mix in the red hot sauce (I usually use about 3/4 of the bottle.) 

Coat the chicken chunks in the sauce mixture.  Dump the entire bowl– chicken and remaining sauce onto the Boboli crust.  Top with mozzarella, onion, tomato and black olives. 

Bake until cheese is bubbly and the pizza is heated through.  Sprinkle with blue cheese crumbles, if desired and serve.

Depending on what we have on hand, determines what the toppings are.  Sometimes we use just onion, or just the chicken mixture and cheese.  Occasionally I drizzle ranch dressing on top before eating it.  It's really up to you and your family.  Personally, I like adding my onions raw after I take it from the oven.  I like the bite of the red onion to counter-act the hot sauce.
