Buffalo Chicken Lettuce Wraps

  1. 6 ounces - chicken
  2. 2 tablespoons - buffalo sauce plus more for serving with
  3. 1 tablespoons - olive oil
  4. 1/2 cups - chopped bell pepper
  5. 1/2 cups - chopped portabella mushrooms
  6. 3 leaves - Romaine lettuce
  7. 2 1/2 tablespoons - blue cheese crumbles


Coat chicken in buffalo sauce then cook, covered, in oven at 375 degrees F for 25 minutes.

Meanwhile, saute mushrooms and peppers in olive oil over medium heat.

Shred chicken when it is finished cooking.

Place chicken and veggies in lettuce boats (leaves of lettuce).

Sprinkle blue cheese crumbles and ½ tablespoon of buffalo sauce over each one.
