Bruschetta Chicken Pasta

Ingredients:

  1. 1 packages - McCormick's Sweet Basil & Oregano Bruschetta Chicken Seasoning Mix
  2. 1/2 cups - olive oil
  3. 2 pounds - plum or roma tomatoes - about 10 quartered, lengthwise
  4. 1 pounds - chicken tenders cut in 1-inch strips
  5. 8 ounces - spaghetti or angel hair pasta
  6. 1 tablespoons - balsamic vinegar

Directions:

Mix oil and seasoning mix in small bowl until well blended. Reserve 3 tablespoons of mixture; set aside.
Place tomatoes in single layer, cut side up, on one s ide of large shallow foil-lined baking pan. Place chicken strips on other side of pan. Brush tomatoes and then chicken generously with oil and seasoning mixture.
Bake at 425 degrees F for 30 minutes or until chicken is cooked through and tomatoes are tender.
Meanwhile, cook pasta according to package directions. Drain well.
Remove tomatoes from baking pan and coarsely chop. Spoon them into a large serving bowl. Add pasta, chicken, pan juices, reserved oil mixture and vinegar; toss to coat.
Sprinkle with grated Parmesan cheese, if desired.
