Bruncheon Eggs

Ingredients:

  1. 36 - Duck Eggs
  2. 36 - Slices of Gruyere
  3. 2 bunches - Spinach Leaves cleaned,dried and stems removed
  4. 3 cups - Whipping Cream
  5. 5 - Spring Onions chopped fine
  6. 1 - Red Pepper chopped fine
  7. 1 cups - Parmesan Cheese Grated
  8. 5 dashes - Sea Salt Black Pepper
  9. 2 teaspoons - Paprika
  10. 2 tablespoons - Italian Parsley minced

Directions:

Line the bottom of a slightly greased pan with spinach leaves, Top with your choice of cheese.
Break eggs (Whole) into baking dish and space them a equal distance apart, Pour whipping cream over top.
Bake at 425 for 12 minutes
Sprinkle with parmesan cheese, pepper and paprika. Return to oven for additional 12 minutes.
Sprinkle with parsley, let set at room temperature for 10 mins before serving
