Ingredients:
- 8 - eggs
- 1/2 cups - milk
- - salt and pepper to taste
- 1 cups - grated cheddar cheese divided
- - olive oil for cooking
- 1/4 cups - diced yellow onion
- 1 teaspoons - minced garlic
- 1/3 cups - water
- 2 cups - diced broccoli florets if frozen, thaw in microwave first
- 1/4 cups - green chilies
- 2 tablespoons - chopped cooked bacon more or less, to taste
Directions:
Preheat the oven to 425 degrees F.
Whisk together the eggs, milk, salt and pepper in a large bowl; stir in half of the grated cheese (reserving the rest of the cheese for later).
In a cast iron or oven-safe skillet, add the olive oil and heat over medium heat; saute onion and garlic for 2-3 minutes until just tender, stirring frequently. Add broccoli and green chilies to pan with water and allow to simmer for 2 to 3 minutes.
Spread the ingredients in the skillet out into an even layer in bottom of skillet; whisk the egg mixture briefly again and pour it into the pan. Sprinkle with remaining cheese and chopped cooked bacon.
Place pan in oven and bake until the middle is just barely set, about 12 minutes. Let rest for 5 to 10 minutes before slicing into wedges and serving.
Leftovers will keep well in the fridge, covered, for about 3 days.
