Bran Muffins

Ingredients:

  1. 1/4 cups - Applesauce
  2. 1/2 cups - Boiling water
  3. 3/4 cups - Sugar or monkfruit
  4. 1 whole - Egg
  5. 3/4 teaspoons - Salt
  6. 3/4 cups - Grape nuts
  7. 3/4 cups - All bran
  8. 1 1/4 cups - Flour
  9. 1 cups - Buttermilk
  10. 1 1/4 teaspoons - Baking soda

Directions:

In mixer blend apple sauce and water. Add sugar , egg and salt and blend. Then add grape nuts, all bran, flour and mix well. In a separate bowl mix buttermilk and baking soda. Then add to mixer and mix well. Let batter sit covered in fridge for 30 min. Stir well as all bran sinks to bottom as you fill cupcake liners to top. Bake in over at 350* for 20 min. Makes 12 muffins
