Braised Pork with Hominy and Peppers (Stew)

Ingredients:

  1. 4 cloves - garlic crushed
  2. 12 - peppercorns in cheesecloth bag
  3. 10 cups - water
  4. 2 1/2 pounds - boneless pork cubed
  5. 1 - sliced onion
  6. 2 - bay leaves
  7. 3 tablespoons - olive oil
  8. 1 - onion minced
  9. 1 - large red bell pepper diced
  10. 1 - large green bell pepper diced
  11. 3 cloves - garlic minced
  12. 1 - jalapeno pepper minced
  13. 1/2 teaspoons - cumin seeds
  14. 1 cups - chopped tomatoes and juice
  15. 1/2 cups - chopped fresh cilantro
  16. 1 tablespoons - chopped fresh oregano
  17. 1 cans - 29 oz. hominy drained
  18. 8 ounces - chorizo casings removed, crumbled

Directions:

Place the crushed garlic, cheesecloth bag of peppercorns, water, cubed pork, sliced onion and bay leaves in a large pot and simmer for 1 hour.

Meanwhile, saute bell peppers, minced garlic, and jalapeno in olive oil. Add to pork mixture.

Add cumin, tomatoes, cilantro, oregano, hominy, and chorizo, and simmer for 45 minutes.

Salt and pepper to taste. Garnish with fresh cilantro.
