Bourbon Glazed Salmon

Ingredients:

  1. 1 cups - packed brown sugar
  2. 6 tablespoons - bourbon
  3. 1/4 cups - low-sodium soy sauce
  4. 2 tablespoons - fresh lime juice
  5. 2 teaspoons - grated peeled fresh ginger
  6. 1/2 teaspoons - salt
  7. 1/4 teaspoons - freshly ground black pepper
  8. 2 cloves - garlic crushed
  9. 8 - salmon fillets (6 oz. each - about 1 inch thick)
  10. - cooking spray
  11. 4 teaspoons - sesame seeds for serving
  12. 1/2 cups - thinly sliced green onions for serving

Directions:

Combine the brown sugar, bourbon, soy sauce, lime juice, ginger, salt, pepper and garlic in a large zip-top plastic bag; add salmon fillets. Seal bag, and marinate in refrigerator 30 minutes, turning bag once. Remove fillets from bag; discard marinade.

Preheat broiler.

Place fillets on broiler pan coated with cooking spray. Broil 11 minutes or until fish flakes easily when tested with a fork. Sprinkle each fillet with 1/2 teaspoon sesame seeds and 1 tablespoon green onions.
