Number of Servings:
Ingredients:
- 1 - single pie crust (refrigerated dough or homemade)
- 1 cups - light brown sugar
- 4 tablespoons - unsalted butter melted
- 1/2 teaspoons - salt
- 5 - eggs beaten
- 1 1/2 cups - light corn syrup
- 2 tablespoons - bourbon
- 1 teaspoons - vanilla
- 2 cups - pecan pieces
- 1 cups - chocolate chips or more, if desired
Directions:
Preheat oven to 350 degrees F. Roll out pie dough into pie plate, crimp edges, and refrigerate.
In a large mixing bowl, beat together the eggs. Add light brown sugar, salt, vanilla, light corn syrup and bourbon; mix until fully combined. Stir in melted butter.
Cover bottom of pie dough with pecan pieces and sprinkle chocolate chips over top. Pour pecan pie filling mixture over the pecans to fill up the pie.
Bake for 45 to 60 minutes (covering edges of crust with aluminum foil, if necessary, to prevent scorching).
Remove pie from oven and allow to cool and set completely before refrigerating.
