Ingredients:
- 2 tablespoons - olive oil
- 1 - yellow onion thinly sliced
- 1 - rib celery thinly sliced
- 1/2 pounds - ground beef
- 1/2 pounds - ground veal
- 1/2 pounds - ground pork
- 1/2 cups - dry white wine
- 2 cups - beef broth
- 2 tablespoons - tomato paste
- 1 tablespoons - flat leaf parsley chopped
- - salt and pepper
Directions:
1. Preheat oven to 350F
2. In a large frying pan over medium high heat, warm the olive oil. Add the onion and celery and saute until softened (about 5 minutes). Add the garlic and cook for 1 minute.
3. Stir in the beef, veal, and pork. Stir and break up with a wooden spoon until browned.
4. Add the wine and stir until almost evaporated. (about 2-3 minutes)
5. Pour in the broth, tomato paste and parsley. Season with salt and pepper and stir until fully mixed.
6. Transfer the meat mixture to a Dutch oven. Cover and cook, stirring occasionally, until thickened. (about 1.5 hours)
7. Serve with noodles of your choice and top with Parmesan.
