Blueberry Vinegar

Ingredients:

  1. 1 3/4 cups - white wine vinegar
  2. 2 tablespoons - sugar
  3. 1/2 cups - blueberries
  4. 1 teaspoons - grated lemon peel

Directions:

In stainless steel saucepan, combine vinegar and sugar. Bring to a simmer. Remove from heat; stir to dissolve sugar. Stir in berries and lemon peel. Pour vinegar and fruit into a jar. Let cool to room temperature. Cover and store at least 48 hours. Use for vinaigrette dressing for mixed greens or fruit salad, or use in your favorite creamy dressings.
