Ingredients:
- 1 3/4 cups - Quaker Oats (quick or old-fashioned) Uncooked
- 1 1/2 cups - All-purpose flour
- 3/4 cups - Brown sugar Firmly packed
- 1/2 cups - Nuts Chopped
- 1/2 teaspoons - Baking soda
- 1/4 teaspoons - Salt (optional)
- 3/4 cups - Margarine or butter (1 1/2-stickx0 Melted
- 2 cups - Fresh or frozen blueberries
- 1/2 cups - Sugar
- 3 tablespoons - Water
- 2 tablespoons - Cornstarch
- 1 tablespoons - Lemon juice
Directions:
1. Heat oven to 350. Grease 11 X 7-in. glass baking dish.
2. Combine dry ingredients for crust. Add margarine, mixing until crumbly.
3. Reserve 1 cup; press remaining mixture onto bottom of prepared dish. Bake 10 min.
4. In small saucepan, combine blueberries, sugar and 2 T water.
5. Bring to a boil and simmer uncovered for 2 minutes, stirring occasionally.
6. Combine cornstarch, remaining 1 T water and lemon juice; mix well.
7. Gradually stir into blueberry mixture; cook and stir about 30 seconds or until thickened.
8. Spread filling over partially baked base to within 1/4-in. of dish; sprinkle with reserved oat mixture.
9. Bake 18-20 minutes or until topping is golden brown. Cool and cut into bars. Store tightly covered.
