Blueberry Muffins

Ingredients:

  1. 1 sticks - oleo softened
  2. 1/2 cups - Wesson vegetable oil
  3. 2 - eggs
  4. 3 tablespoons - Butavan (OR 1 T. vanilla with 1 t. coconut and butter flavoring)
  5. 1 cans - blueberries (15 oz.) reserve juice
  6. 1 cups - buttermilk
  7. 4 1/2 cups - flour
  8. 2 tablespoons - baking powder
  9. 2 cups - sugar

Directions:

Mix oil and oleo; add and mix in sugar, eggs, flour, Butavan, and baking powder slowly.

Add buttermilk and juice from blueberries. Mix well and stir in blueberries.

Bake at 400 degrees F for 20 minutes in muffin tins sprayed with Baker's Joy.

Will keep in fridge for 2 weeks if stored tightly.
