Ingredients:
- 1 sticks - oleo softened
- 1/2 cups - Wesson vegetable oil
- 2 - eggs
- 3 tablespoons - Butavan (OR 1 T. vanilla with 1 t. coconut and butter flavoring)
- 1 cans - blueberries (15 oz.) reserve juice
- 1 cups - buttermilk
- 4 1/2 cups - flour
- 2 tablespoons - baking powder
- 2 cups - sugar
Directions:
Mix oil and oleo; add and mix in sugar, eggs, flour, Butavan, and baking powder slowly.
Add buttermilk and juice from blueberries. Mix well and stir in blueberries.
Bake at 400 degrees F for 20 minutes in muffin tins sprayed with Baker's Joy.
Will keep in fridge for 2 weeks if stored tightly.
