Blueberry and Cucumber Salad with Feta

Ingredients:

  1. 2 tablespoons - Extra Virgin Olive Oil
  2. 2 tablespoons - White Wine Vinegar
  3. 1 teaspoons - Honey
  4. - Kosher Salt to taste
  5. - Black Pepper to taste
  6. 3 cups - Blueberries heaping cups
  7. 2 whole - Hothouse Cucumbers peel, scrape seeds out, cut into 1-inch pieces on a diagonal
  8. 3 whole - Scallions thinly sliced
  9. 1 cups - Crumbled Feta
  10. 1 - Heart of Romaine chopped
  11. 2 cups - Mint Leaves lightly packed

Directions:

In a small bowl, whisk together oil, vinegar, honey and salt and pepper. Combine blueberries, cucumbers, scallions, feta, romaine, and mint in a large serving bowl. Toss with dressing. Add more salt and pepper, to taste.
