Blue Cheese and Walnut Spread

Ingredients:

  1. 4 ounces - to 6 ounces cream cheese at room temperature
  2. 1/2 cups - chopped walnuts
  3. - coarse salt and ground pepper
  4. 4 ounces - (1 cup) cold crumbled Stilton blue cheese
  5. - crackers or crostini for serving with

Directions:

In a medium bowl, stir cream cheese with wooden spoon until softened (I started with whipped lite cream cheese).

Mix in walnuts; season with salt and pepper. Gently fold in blue cheese, breaking up as little as possible.

Transfer mixture to a small bowl; smooth top. Serve with crackers or crostini.

Store covered with plastic wrap and refrigerated for up to one week.
