Blackened Tilapia

Ingredients:

  1. 4 - tilapia fillets 6 ounces each
  2. 2 tablespoons - blackening seasoning or any Cajun seasoning
  3. 3 tablespoons - canola oil plus more if needed

Directions:

Rub the tilapia with the blackening seasoning (or simply sprinkle over the tilapia liberally). Heat the oil in a large nonstick skillet over medium-high heat. Cook tilapia fillets in batches until cooked through, 2-3 minutes per side, adding more oil to the pan as needed.
Great served with rice pilaf, dirty rice, or corn bread.
