Black Olive Chimichurri

Ingredients:

  1. 1/2 cups - pitted black olives
  2. - a few large sprigs of fresh oregano stemmed
  3. 1 teaspoons - dried red chili flakes
  4. 1 teaspoons - sweet paprika
  5. 3 tablespoons - fresh lemon juice
  6. 1/3 cups - extra virgin olive oil
  7. - salt
  8. - freshly ground black pepper

Directions:

Place all the ingredients for the chimichurri into a food processor and pulse until combined but still thick.

Drizzle beef with about a T of chimichurri. Pour the rest into a small bowl and bring it to the table for those who would like more.
