Ingredients:
- 1/2 cups - pitted black olives
- - a few large sprigs of fresh oregano stemmed
- 1 teaspoons - dried red chili flakes
- 1 teaspoons - sweet paprika
- 3 tablespoons - fresh lemon juice
- 1/3 cups - extra virgin olive oil
- - salt
- - freshly ground black pepper
Directions:
Place all the ingredients for the chimichurri into a food processor and pulse until combined but still thick.
Drizzle beef with about a T of chimichurri. Pour the rest into a small bowl and bring it to the table for those who would like more.
