Black Olive and Tuna Salad

Ingredients:

  1. 6 ounces - can solid white albacore tuna in water drained
  2. 6 ounces - can large pitted ripe olives chopped
  3. 6 - eggs hard boiled and chopped
  4. 1 cups - celery chopped
  5. 1/2 cups - real mayonnaise
  6. 2 tablespoons - dill pickle relish
  7. 4 - medium tomatoes
  8. - salt and pepper to taste

Directions:

1. Combine all ingredients except tomatoes in a large mixing bowl.

2. Season to taste with salt and pepper. Cover and chill for 30 minutes.

3. Slice approximately 1/4-inch off the stem-end of each tomato and hollow it out. Fill with black olive and tuna salad.

(Could be served as a sandwich filling or as a salad over mixed greens, as preferred).
