    One of Grandma's tricks to form stiff peaks quickly with whipping cream was to chill the mixing bowl and the beaters before beating the cream. She also made sure that the whipping cream was well chilled.

Ingredients:

  1. 2 cans - 20-oz. Can tart, pitted cherries Undrained
  2. 1 cups - Granulated sugar
  3. 1/4 cups - Cornstarch
  4. 1 1/2 teaspoons - Vanilla extract
  5. 2 - 9-in. Chocolate cake layers Baked and cooled
  6. 3 cups - Cold whipping cream
  7. 1/3 cups - Confectioner's sugar

Directions:

1. Drain cherries, reserving 1/2 C juice. Combine reserved cherry juice, cherries, granulated sugar an cornstarch in saucepan. Cook and stir over low heat until thickened. Add vanilla and stir.
2. Split each cake layer in half horizontally. Crumble one half layer; set aside.
3. Beat cold whipping cream and the confectioner's sugar in large bowl with an electric mixer set at high speed until stiff peaks form. Reserve 1 1/2 C whipped cream for deorative piping.
4. Place one cake layer on serving plate. Spread w/ 1 C whipped cream; top w/ 3/4 C. cherry topping. Top with second cake layer, 1 C. whipped cream and 3/4 C. cherry topping; top w/ third cake layer.
5. Frost cake sides with remaining whipped cream; pat gently with reserved cake crumbs.
6. Spoon reserved 1 1/2 C. whipped cream into pastry bag fitted w/ star tip; pipe around top and bottom edges of cake. Spoon remaining cherry topping over top of cake.
