Black Eyed Peas and Ham in the Slow Cooker

Ingredients:

  1. 3 cups - chopped ham, ham bone or bacon
  2. 3 cups - black-eyed peas
  3. 1 - onion chopped
  4. 2 cups - instant long grain brown rice
  5. 1 cans - petite diced tomatoes 15 oz.
  6. 4 cups - water

Directions:

1. In a large crock pot place the peas, ham, onion, and water. Cook on high setting for 6 hours.

2. Remove ham from ham bone and return ham to crock pot. It should just fall off the bone.

3. Add rice to crock pot and stir to combine. Continue to cook on low setting about another hour.

4. Serve with corn bread and top with chopped green onions if desired.
