Ingredients:
- - cooking spray
- 1 cans - corn
- 1 cans - black beans
- - chopped red bell pepper
- - handful of chopped cilantro
- - juice of 1 lemon or lime
- - garlic
- - salt
- - chopped green onions
Directions:
Roast the corn in the cooking spray on the stove.
Remove from heat and stir in all other ingredients.
Delicious cold or hot, served on chicken or fish.
