Black Bean Quesadillas

Ingredients:

  1. 2 cans - 15 oz. seasoned black beans drained
  2. 1 cups - salsa
  3. 2 cups - shredded Colby and Monterey Jack cheese
  4. 8 - flour tortillas (8-inch)
  5. 1/3 cups - sour cream

Directions:

Mash one can of beans in a large bowl. Mix in remaining can of beans and the salsa.

Spread mixture evenly over 4 tortillas; top with cheese. Cover with remaining tortillas.

Heat skillet and cook quesadillas 2 minutes on each side.

Cut into wedges and serve with salsa and sour cream on the side.
