Black Bean Breakfast Bowls

Ingredients:

  1. 1 tablespoons - olive oil
  2. 8 - eggs lightly beaten
  3. 1/4 teaspoons - salt
  4. 1/4 teaspoons - black pepper
  5. 15 ounces - black beans can, drained and rinsed
  6. 2 tablespoons - fresh cilantro chopped

Directions:

Heat oil in a large skillet over medium heat. Add eggs, salt, and pepper; cook, stirring, until eggs are set, 3 to 5 minutes. Put beans in a microwave-safe bowl; microwave, covered, until warm, about 1 minute. Stir in cilantro. Divide warm beans among 4 bowls. Top with eggs, avocado slices, and salsa.
