Black Bean and Sweet Potato Soup

Ingredients:

  1. 1 tablespoons - vegetable oil
  2. 1 - onion peeled, diced small
  3. 1 cloves - garlic thinly sliced
  4. 1 teaspoons - salt
  5. 1 tablespoons - chipotle puree
  6. 1 cans - black beans
  7. 1 - large sweet potato baked 50-60 minutes and pureed with chipotle
  8. 1 cups - cooked diced or shredded chicken
  9. 3 cups - chicken broth
  10. 2 cups - water
  11. - tortilla chips for serving
  12. - Greek yogurt for serving
  13. - lime juice for serving
  14. - cilantro for serving

Directions:

In a 4-quart pot, sweat the onion, garlic and salt until translucent. Drain, rinse and add the beans, sweet potato, chicken, chipotle, broth and water.

Bring all this to a simmer and cook for about 10 minutes. If you need more liquid to achieve soup viscosity, add some water or milk.

To serve, top with Greek yogurt, lime juice and cilantro.
