Ingredients:
- 1 tablespoons - vegetable oil
- 1 - onion peeled, diced small
- 1 cloves - garlic thinly sliced
- 1 teaspoons - salt
- 1 tablespoons - chipotle puree
- 1 cans - black beans
- 1 - large sweet potato baked 50-60 minutes and pureed with chipotle
- 1 cups - cooked diced or shredded chicken
- 3 cups - chicken broth
- 2 cups - water
- - tortilla chips for serving
- - Greek yogurt for serving
- - lime juice for serving
- - cilantro for serving
Directions:
In a 4-quart pot, sweat the onion, garlic and salt until translucent. Drain, rinse and add the beans, sweet potato, chicken, chipotle, broth and water.
Bring all this to a simmer and cook for about 10 minutes. If you need more liquid to achieve soup viscosity, add some water or milk.
To serve, top with Greek yogurt, lime juice and cilantro.
