Ingredients:
- 1 heads - Garlic
- - Extra-virgin olive oil
- - Kosher salt
- - Freshly ground black pepper
- 2 pounds - Ground beef (80/20 lean-to-fat ratio)
- 4 ounces - Blue cheese Crumbled
- 8 slices - Applewood smoked bacon
- - 3 to 4 T. blackening spice
- 4 - Soft brioche buns, halved
- 1/4 cups - Donkey Sauce See below
- 1 whole - Kosher dill pickle Thinly sliced
- 1/2 whole - Vidalia onion Very thinly sliced
- 1 whole - Heirloom tomato Thinly sliced
- 1 whole - Ripe avocado Sliced
- 1/4 heads - Iceberg lettuce Sliced
- 1 cups - Mayonnaise
- 1/4 cups - Roasted garlic
- 1 teaspoons - Yellow mustard
- 4 dashes - Worcestershire sauce
- 1/4 teaspoons - Kosher salt
- 4 pinchs - Freshly ground black pepper
Directions:
Preheat oven to 375.
FOR GARLIC BUTTER:
1. Cut off top third of garlic head and place remainder on a piece of oil. Drizzle with olive oil and sprinkle with salt and pepper. Wrap in foil and bake 1 hour, 15 min. Let cool.
2. Squeeze out cloves. Mince 1 tsp. roasted garlic; melt with butter and salt in a saucepan. Refrigerate garlic butter.
3. Reserve remaining roasted garlic for Donkey Sauce.
FOR BURGERS:
1. Divide beef into 8 equal think patties.
2. Sprinkle 1 oz. cheese in the center of 4 patties; top with another patty. Crimp edges tightly, sealing in cheese. Chill 30 minutes.
3. Set a griddle pan over medium-high heat on a stovetop or grill; cook bacon until crisp. Discard all but a little bacon fat. Season burgers with blackening spice. Cook on griddle in bacon fat 3 to 4 minutes per side for medium-rare. Set on a clean plate to rest.
4. Brush cut sides of buns with garlic butter. Toast buns on both sides on griddle until crisp. Spread Donkey Sauce on buns. Add pickles, burger, bacon, onion, tomato, avocado and lettuce; then set top buns in place.
FOR DONKEY SAUCE:
Stir together 1 C. mayonnaise, 1/4 C. roasted garlic, 1 tsp. yello mustard, 4 dashes Worcestershire sauce, 1/4 tsp. kosher salt, and 4 pinches freshly ground pepper in a bowl.
