Bitter Gourd

Ingredients:

  1. 2 tablespoons - olive oil
  2. 5 - bitter gourds
  3. 1 teaspoons - turmeric
  4. - sea salt to taste
  5. 1 - medium yellow onion peeled, sliced finely
  6. 2 - tomatoes finely chopped

Directions:

Wash and trim bitter gourd ends. Cut in half lengthwise and remove the seeds.

Slice the halves into 1/4-inch pieces; rub salt into the pieces and set aside for 20 to 30 minutes (to remove the bitterness).

Rinse out the salt and dry the bitter gourd.

Heat oil in saucepan and then add the bitter gourd, turmeric and salt. Sauté on medium heat for 3-4 minutes.

Add onions and sauté for another 5 minutes.

Add tomatoes, mix well and cook on medium heat for another 5 minutes.
