Ingredients:

  1. 4 1/2 tablespoons - Butter, melted and cooled
  2. 1/3 cups - coconut flour
  3. 2 tablespoons - full fat sour cream
  4. 4 - Eggs
  5. 1/4 teaspoons - salt
  6. 1/4 teaspoons - baking powder
  7. 1 1/3 cups - sharp cheddar

Directions:

Preheat oven to 400 degrees and grease muffin pan
Combine melted (cooled) butter, eggs, salt, and sour cream - whisk
Add coconut flour and baking power and stir until combined
Stir in cheese
Drop batter into 12 greased muffin tins
Bake 15 minutes or until tops are brown
