Directions:

Set BGE to indirect heat with a drip pan

Preheat egg to 350

Just before putting the quarters on shake them in a bag with some flour, cornstarch, and pepper. Shake off the excess.

Cook to 195 internal, it will take about an hour and a half.
After the first hour, move them around according to how done they are.
