Ingredients:
- 2 cups - sliced yellow squash
- 1/4 cups - chopped onion
- 16 - Ritz or buttery round crackers crushed
- 1/2 cups - shredded Cheddar cheese
- 1 - egg beaten
- 1/4 cups - plus 1/8 C. milk
- 1/8 cups - butter melted
- 1/2 teaspoons - salt
- 1 - ground pepper to taste
- 1 tablespoons - butter
- 1 - banana pepper or other chopped Optional
Directions:
Preheat oven to 400 degrees
In a small amount of water cook the squash & onion & pepper until tender - about 3 mins. DO NOT OVER COOK! Drain well & place in large bowl.
Mix cracker crumbs & cheese. Stir half into the cooked squash.
In small bowl combine egg & milk. add to squash.
Stir in 1/8 C. melted butter, salt, pepper.
Spread in greased square bowl.
Sprinkle with remaining cracker mixture & dot with butter.
b ake for 25 minutes or until lightly brown.
