I spent my 20's working for Ann Taylor and living in different cities while working on a new-store opening team. I met one of my dearest friends on this team; she was from Michigan and we would spend holidays together because neither one of us had family. Her mom flew in one year and made the "best potato casserole" and forever that's what it has been called. Every time I make this, I take a picture of how old the recipe is (20 years now) and send it to my girlfriend Kristen with a ton of love and great memories.

Ingredients:
- 2 pounds - frozen hash brown potatoes thawed
- 1/2 cups - melted butter
- 1 teaspoons - salt
- 1 cans - cream of chicken soup
- 1 pints - sour cream
- 1/2 teaspoons - pepper
- 1/2 - medium onion chopped
- 10 ounces - grated cheddar cheese
- 1/4 cups - melted butter
- 1 cups - crushed corn flakes
Directions:
Mix all ingredients (except topping) and put in a 2-quart baking casserole dish.
Mix together topping ingredients, and sprinkle over casserole.
Bake at 350 degrees F for an hour to an hour and a half, until bubbly.
