Ingredients:
- 2 cans - (14.5 ounce) stewed tomatoes
- 1 cans - 6 oz. tomato paste
- 4 tablespoons - chopped fresh parsley
- 1 cloves - garlic minced
- 1 teaspoons - dried oregano
- 1 teaspoons - salt
- 1/4 teaspoons - ground black pepper
- 1 tablespoons - brown sugar
- 1/8 teaspoons - red pepper flakes
- 2 tablespoons - olive oil
- 1/3 cups - finely diced onion
- 1/4 cups - white wine OR chicken broth
Directions:
In a food processor or blender place tomatoes, tomato paste, chopped parsley, garlic, oregano, salt, pepper, red pepper flakes and brown sugar; blend together until smooth (or use crushed tomatoes and there's no need to blend together - just stir).
In a large skillet over medium heat, saute the chopped onion in olive oil for 2 minutes. Add blended tomato sauce and white wine.
Simmer for about 20 minutes, stirring occasionally, until heated through, thickened, and flavors have melded for serving.
Freezes well - make extra and freeze for future meals. Add ground meat or meatballs, if desired.
