Best Baked Potatoes

Ingredients:

  1. 4 - medium size russet potatoes
  2. 1/2 cups - water
  3. 2 tablespoons - salt
  4. 1 tablespoons - vegetable oil, for brushing
  5. Goat Cheese Topping
  6. 4 ounces - goat cheese
  7. 2 tablespoons - extra virgin olive oil
  8. 2 tablespoons - freshly chopped parsley
  9. 1 tablespoons - chopped shallot
  10. 1/2 teaspoons - lemon zest
  11. - salt and pepper, as needed

Directions:

Brine the potatoes:
Poke holes in each potato with a fork 5-6 times.
Mix together in a bowl, 1/2 cup water and 2 Tablespoons salt until combined.
Roll one potato at a time gently in the mixture until skin is covered, and then place potatoes on a baking wire rack set on a baking sheet.

Bake potatoes in the oven at 450° F until internal temperature registers 205° F, about 45 minutes. Check the internal temperature with a thermometer, and if thermometer slides in smoothly to the core, and the temperature is correct, then the potatoes are done.

Leave the potatoes on the wire rack and brush the skins with a tablespoon of vegetable oil (NOT butter). Put potatoes back in the oven at 450° F for another 10 minutes.

Meanwhile, mix together your topping ingredients - goat cheese, olive oil, parsley, shallots, salt and pepper and lemon zest until thoroughly combined.

Remove potatoes from oven and immediately cut an X into the top of each potato, gently squeezing, to open a bit and allow steam to escape.

Serve immediately with a pat of butter and a spoon full of goat cheese topping.
