Berry Cream Muffins

Ingredients:

  1. 4 cups - all-purpose flour
  2. 2 cups - sugar
  3. 1 teaspoons - baking powder
  4. 1 teaspoons - baking soda
  5. 1 teaspoons - salt
  6. 3 cups - blueberries or raspberries
  7. 4 whole - eggs
  8. 2 cups - sour cream
  9. 1 cups - vegetable oil
  10. 1 teaspoons - vanilla extract

Directions:

In a large bowl, combine flour, sugar, baking powder, baking soda and salt. Add berries and toss gently. In another bowl, combine the eggs, sour cream, oil and vanilla; mix well. Stir into dry ingredients just until moistened. Fill greased or paper-lined muffin cups two-thirds full. Bake at 400 for 20-25 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire rack.
