Ingredients:
- 1 1/4 cups - All Purpose Flour sifted
- 1/4 cups - Sesame Seeds lightly toasted
- 2 tablespoons - Freshly Grated Parmesan Cheese
- 1/2 teaspoons - Salt
- 1/8 teaspoons - Cayenne Pepper
- 3 tablespoons - Cold Unsalted Butter cut into pats
- 3 tablespoons - Cold Lard (NOT vegetable shortening) diced
- 1/4 cups - Ice Water
Directions:
1. Combine flour, benne, cheese, salt and cayenne in large shallow bowl. Scatter butter and lard on top, then, with pastry blender or two knives, cut in until texture resembles lentils. Add ice water, forking flour mixture briskly, until soft dough forms. Shape into ball, flatten, wrap in plastic and refrigerate 30 minutes.
2. When ready to proceed, preheat oven to 400 degrees. Divide dough in half, and roll one piece at a time on lightly floured surface into a 9-inch square about 1/8-inch-thick.
3. Using a ruler as a guide and a pastry cutter, cut dough into strips about 3/8-inch-wide. Now cut each strip into 3-inch lengths.
4. Arrange strips 1 inch apart on ungreased baking sheets. Bake, one sheet at a time, on middle oven shelf until very lightly browned, 8-10 minutes.
5. Transfer at once to wire racks and cool to room temperature. Serve with cocktails or put out on an open-house buffet.
