    Baking at a low temperature for this long time makes for a more tender roast.

Ingredients:

  1. 1 - beef or pork roast
  2. 1 - medium onion peeled and sliced
  3. - salt and pepper to taste

Directions:

Preheat oven to 225° to 250°. Liberally sprinkle with salt and pepper. Place on a rack in a baking pan. Place sliced onions all over the top of the roast. Cover with aluminum foil, crimping the around the the edges of the pan to seal well. Bake for 4 to 6 hours depending on the size of your roast. This also works well with a pork roast.
After removal from oven, let rest for 15 minutes while covered, before slicing. Reserve the onions and the juices for a nice gravy.
