Ingredients:
- 1 1/2 pounds - lean ground beef
- 1/2 - sweet yellow onion peeled, diced
- 1 cloves - garlic minced
- 1 cans - black beans rinsed, drained
- 1 packages - taco seasoning mix
- 1 cans - red enchilada sauce
- 8 - medium flour tortillas
- 3 cups - shredded cheese
- - Sliced olives, fresh cilantro, sour cream optional garnishes
Directions:
Preheat oven to 350° F, and spray a 9-x-13-inch baking pan with cooking spray.
In a large skillet, saute onion and garlic in a little bit of olive oil just until slightly tender (about 3-4 minutes); add ground beef to the skillet over medium-high heat and cook until browned and cooked through, breaking up the beef into small pieces while it cooks.
Stir in the beans and taco seasoning mix along with 1/4 of the can of enchilada sauce, and heat for 5-8 minutes allowing the seasonings to blend and beans to heat through. Remove from heat and stir in 1 cup of the shredded cheese.
Assemble enchiladas by filling each flour tortilla with about 1/8 of the meat mixture, rolling up to close and placing seam-side down in the prepared baking dish.
Pour remaining enchilada sauce over top of rolled-up enchiladas and sprinkle remaining cheese over top of all. Bake uncovered for 20 minutes.
Serve immediately.
