Beef Enchiladas

Ingredients:

  1. 1 1/3 cups - enchilada sauce
  2. 1/2 cups - tomato sauce
  3. 1/4 teaspoons - chili powder
  4. 2 cups - ground beef cooked
  5. 1/4 cups - onion diced
  6. 2 cups - cheddar cheese shredded
  7. 12 - tortillas

Directions:

Mix first 3 ingredients in a bowl. Pour in the bottom of 9x13 pan just to cover. Set remainder aside.

Combine beef, onion and 1 cup of cheese in another bowl. Add 1/3 cup of sauce mixture from first bowl. Then roll beef mixture into tortillas and place in pan. Pour remaining sauce mixture on top. Sprinkle with cheese.

Bake covered at 375 degrees for 15 minutes. Uncover and back additional 3 minutes or until cheese is melted.
