Ingredients:
- 1 cans - Rotel Original Diced Tomatoes and Green Chilis (10oz each)
- 2 packages - cream cheese (8 oz. each) softened
- 1/2 jars - Dried Beef (2.25 oz jar) Hormel or Armor brand cut with scissors into 1/8's.
- 3 - green onions washed and sliced, roots removed
Directions:
Beat softened cream cheese in a mixing bowl until smooth. (You can even microwave the cream cheese blocks for 30 or so seconds after removing the wrapping to ensure soft consistency.)
In a blender pureé cut dried beef and Rotel tomatoes. Add this pureé to the beaten cream cheese. Mix with beaters until combined. Stir in sliced green onions.
Let rest in refrigerator for at least 1 hour to let flavors combine. If possible, letting it sit in the refrigerator for several hours or overnight gives it a better consitency.
Serve with corn tortilla chips, or corn chips like Fritos.
