Ingredients:
- 3 strips - bacon
- 1 tablespoons - olive oil
- 2 cloves - garlic
- 1/2 cups - finely diced onion
- 3/4 cups - finely diced carrot
- 1 pounds - ground beef
- 1 teaspoons - kosher salt
- 1/4 cups - tomato paste
- 1/4 cups - white wine
- 3/4 cups - beef broth
- 1/2 pounds - cooked penne pasta
- - ricotta, Parmesan and pepper
Directions:
In a pot or Dutch oven, saute the bacon in the olive oil until just crisp. Add the garlic, onion, and carrot; cook until veggies are tender (about 5 minutes).
Add beef and salt to Dutch oven and cook, breaking meat up, for about 10 minutes cooked through.
Stir in tomato paste, white wine, and chicken broth. Cook covered for 5 minutes, then uncovered until the sauce is reduced almost completely (about 10-15 minutes).
Stir in cooked penne and serve with ricotta, Parmesan and sprinkled with black pepper, if desired.
