Ingredients:
- 1 whole - corn tortilla
- 1/2 cups - pinto beans cooked or canned (rinsed)
- 2 tablespoons - Mexican blend cheese.
- 1/4 cups - salsa
- 1 cups - shredded cabbage
- 1 whole - tomato chopped
- 2 tablespoons - reduced-fat dressing
Directions:
Bake 1 corn tortilla in 400-degree oven until crisp. Spread with ½ c cooked or canned pinto beans (rinsed) and 2 Tbsp shredded reduced-fat Mexican blend cheese. Return to oven for 5 to 10 minutes until cheese melts. Top with ¼ c salsa. Serve with a cabbage salad.
