Bean and Corn Nachos

Ingredients:

  1. - baked tortilla chips multi-grain is nice
  2. 1 cans - black beans rinsed, drained
  3. 1 cans - southwest corn (corn with peppers) drained
  4. 1/2 cups - salsa
  5. 1 cups - shredded Monterrey Jack cheese or cheddar, if you prefer
  6. - salsa, sour cream, guacamole for serving with, as desired

Directions:

In a small bowl combine the black beans, corn, and salsa. Mix until thoroughly combined.

Place tortilla chips on baking tray and top with black bean mixture. Sprinkle cheese over top.

Turn oven onto high heat broil and place nachos in oven (keeping a close eye on them) for 3-6 minutes until cheese is melted and nachos are heated through.

Serve with desired garnishes or toppings.
