Ingredients:
- 2 racks - baby back ribs
- 1/2 cups - kosher salt
- 1/2 cups - brown sugar
- 2 tablespoons - finely ground black pepper
- 1 tablespoons - chili powder
- 1 tablespoons - ground white pepper
- 1 tablespoons - garlic powder
- 1 tablespoons - onion powder
- 1 tablespoons - ground coriander
- 1 tablespoons - Chinese five-spice powder
- 1 tablespoons - celery salt
- 2 drops - liquid smoke
- - BBQ sauce
Directions:
First, trim and prep ribs by removing fibrous membrane from underside of ribs. Preheat oven to 300. Liberally season ribs with dry rub on all sides. Line sheet pans with parchment paper and lay ribs, curve-up, on the paper. Add a drop or two of liquid smoke to the pan. Cover and seal well with heavy duty foil. Put sheet pans on racks in over and cook for three hours. Remove pans from oven and cool on wire racks for 45 minutes during which time DO NOT OPEN THE FOIL. Afterwards, unwrap and baste ribs all over with BBQ sauce. Preheat oven to 425 degrees. Line a clean sheet pan with parchment paper and inset a wire rack. Roast ribs for about 10 minutes until nicely charred. Slice into individual ribs and serve with more sauce.
