Basil Cream Chicken

Ingredients:

  1. 1 1/2 pounds - boneless skinless chicken breasts cubed
  2. 1 1/3 cups - finely chopped green onions
  3. 1 pounds - fresh mushrooms sliced
  4. 2 tablespoons - vegetable oil
  5. 1/2 cups - butter or margarine
  6. 1/4 cups - all-purpose flour
  7. 2 cups - chicken broth
  8. 1 cups - whipping cream
  9. 2 tablespoons - minced fresh basil (OR 2 tsp dried basil)
  10. 1/4 teaspoons - white pepper
  11. - hot cooked fettuccine

Directions:

In a skillet, saute chicken, onions and mushrooms in oil until chicken is no longer pink.

Meanwhile, start cooking fettuccine in separate pan.

Meanwhile, in a large saucepan, melt butter. Stir in flour until smooth. Gradually add broth and cream. Stir in basil and pepper. Bring to a boil; cook and stir for 2 minutes or until thickened.

Stir in chicken mixture; serve over hot cooked fettuccine.
