Ingredients:
- 1 pounds - ground chicken
- 1/2 teaspoons - baking soda
- 1/4 teaspoons - kosher salt
- 1/4 cups - oyster sauce
- 3 tablespoons - hot chili paste (such as sambal oelek)
- 1 tablespoons - fish sauce
- 2 teaspoons - light or dark brown sugar
- 3 - large shallots, thinly sliced
- 6 ounces - holy basil or sweet basil

Directions:
Vigorously stir chicken, baking soa, 1 Tbsp oil, 1/4 tsp kosher salt and 2 Tbs water in a medium bowl until mixture is smooth and beginning to stick to the sides of bowl; set chicken aside.
Stir oyster sauce, chili paste, fish sauce, and brown sugar n a small bowl; set oyster sauce mixture aside.
Heat remaining 3 Tbsp oil in a large cast iron or nonstick skillet over medium-high. Cook shallots, stirring occasionally with a wooden spoon or heatproof rubber spatula, until softened and golden n spots, about 4 minutes. Add reserved chicken mixture and spread into an even layer. Cook, undisturbed, until beginning to set, about 4 minutes. Break up meat with spoon into small pieces. Pour reserved oyster sauce mixture over and cook, stirring often, until most of the liquid has evaporated and sauce is clinging to meat. Remove pan from heat, add basil (it will seem like a lot) and toss until wilted. Taste and season with more salt if needed.
Serve stir-fry with rice and lime wedges for squeezing over.
