Basic Okra

Ingredients:

  1. 3 tablespoons - olive oil
  2. 2 - medium yellow onions finely chopped
  3. 2 - vine tomatoes finely chopped
  4. 18 ounces - okra (about 50 pieces) washed, dried, ends trimmed, cut into 1/2-inch pieces
  5. - sea salt to taste
  6. - red chili powder to taste
  7. 1/2 teaspoons - coriander powder
  8. 1/2 teaspoons - turmeric powder
  9. - fresh cilantro for garnish

Directions:

Heat oil in a 2-quart saucepan to lightly brown the onions.

Add salt, chili powder, coriander powder and turmeric. Mix.

Add tomatoes and cook on medium heat for 5-6 minutes, covered.

Add okra, mix well and simmer for another 8-10 minutes. Serve garnished with cilantro.
